For jazz and folk, you can't go past Pentangle IMO. They're mainly folk, but there are jazz influences.
Jazz - Dave Brubeck Quartet.
Other folk stuff: Nick Drake, John Martyn, Joni Mitchell. Joni Mitchell branched off into jazz later on in her career. Her live album, "Miles of Aisles", was recorded with a jazz band backing her.
